im having a hard time cutting the octagon evenly.

Practice, or a stencil

You can also print a perfect octagon and cut a stencil from cardboard. It'll be a specific size, but if you find making a regular octagon with this method, a stencil may be the better solution for you. And, of course, you can practice and increase your precision to get this method working perfectly. :)
