Yesterday I met up with Stephan Weber, who is a great advocator of expressive folding. At the end of the night we folded his bull, although I have to admit I couldn't replicate it again now. It's easy to see that Stephan has a lot of experience with folding, as he confidently and quickly makes the paper do exactly what he wants it to. With a bit of practice I hope I'll learn a bit of his shaping techniques, although I have to admit I still love having reference points. But if one could combine the exact placement of folds through references, and the combination of curved and straight folds that Stephan facilitates, I think origami works could be taken to another level.
And, as a disclaimer, of course this model isn't folded as nicely as it should be. It was a test fold, and time was limited. You can see at several points (e.g. the hooves) that with more time and practice they can be shaped quite nicely. And of course the proportions aren't quite there yet.

Tanteidan 11
I've added the information now, it seems diagrams are in Tanteidan 11. It's not out of print yet, but I'm guessing that it won't be available for much longer (ie the last copies will sell sometime soon).

Easy or Not
Sara,
I just finished folding this bull lastnight and I'm wondering........would you agree with me when I say it's not as hard as it looks at all. For the way it looks,it's detail. It's not so hard to fold.....am I right ?

Hard to say
Well, it's hard to say, because I didn't fold it from diagrams, but rather Stephan showed me how to fold it. I'd say it's probably an intermediate model, though.

Paper ?
Sara, just a question.......What kind of paper and paper size did you make your bull from? Because it looks like gift wrap but, I don't think that's what it is.

What paper do you recommend
What paper do you recommend and how big?

Paper
I'm not sure how large the sheets were, something around a 35cm to 50cm square. It was rather heavy paper (wet-folding), but I fear I don't know what paper it exactly was. Sorry, I should have asked back then and noted it down.

Not sure when I will fold it again
Hm, I don't think I mentioned I wanted to fold it again. Quote: "[...] although I have to admit I couldn't replicate it again now"
However, I ordered Tanteidan 11, which seems to have diagrams for the bull, so I might give it a go some time in the future.

Taneteidan
I have been searching everywhere for where to buy any tanteidan books. Where did you get them!?

Did you really look?
Hm, maybe you didn't search hard enough. ;)
First, this page has a link to two sources. Second, my pages on the Tanteidan books I own lists links, e.g. http://www.happyfold...
And finally, it shouldn't be hard to find the publisher's website with Google or so, and then navigate to this page: http://www.origamiho...

struggling with hooves
Hi Sara,
I imagine you will be very busy right now with wedding plans (many congratulations by the way) so you might not see this message for some time but I thought I would ask anyway. I am trying to fold this model and I am having a lot of difficulty doing the hooves. In tanteidan 11, step 23-24, I can't understand what the diagrams are trying to show to make the hooves. I can make the rest of the model but without hooves I am feeling very sad and my model is looking a bit pitiful. Any help or advice you can offer would be greatly appreciated. Thanks in advance!
Sunny

Try asking in a forum - seems you already did!
You are right, I won't be able to answer this for now, as I'm on my honeymoon. :)
I recommend asking such questions in an origami forum, eg. check http://snkhan.co.uk/...
Actually, seems you had the same idea, and very quickly got an answer in the form of a short video. :)
