11-Stage Clover Folding (Shuzo Fujimoto)
Folding this model is just about the best activity for killing time on the airplane! This picture shows it with 11 stages (left) and 7 stages (right), just to show you how they compare.
Trivia: The creases are about 3mm apart in the orange, 11-stage version. In the green, 7-stage version the creases are about 5mm apart.

Flexiball (Jorge Pardo): 24 Modules
Jorge Pardo gave a workshop for his flexiball at the CDO Convention 2009. I actually didn't join it, but it motivated me to fold one. I had this strange idea that I shoulf fold a small version, and started with squares that had a side length of 3.75cm. When Jorge saw this, he told me it was too small, and that you would not be able to flex it without it coming apart. And of course that just motivated me more - plus, I'd already done about quarter of it, so I didn't just want to stop.
